Ingredients:

  • Low-calorie cooking spray
  • 1 diced onion
  • 1 medium butternut squash, peeled, deseeded and cut into wedges
  • 1 small potato, quartered
  • 2 crushed garlic cloves
  • 900ml hot vegetable stock suitable for vegans
  • Thyme sprigs for serving

 

Method:

  1. Heat a large non-stick pan over low heat and spray it with low-calorie cooking spray.
  2. Add the diced onion and cook for 1-2 minutes.
  3. Turn up the heat to medium and add the butternut squash and potato. Cook for 2 minutes.
  4. Add the crushed garlic and lightly season.
  5. Pour in the hot vegetable stock and simmer for 25 minutes.
  6. Use a stick blender or food processor to blend the mixture until smooth.
  7. Check the seasoning and serve hot, topped with thyme sprigs.
