Ingredients:

  • 2 Oreo cookies
  • ½ cup (8 tablespoons) quark
  • 4 teaspoons Sweet Freedom Choc Shot (or low-calorie chocolate syrup)
  • 1 tablespoon granulated sweetener (such as erythritol)
  • 1 teaspoon vanilla extract
  • Spray oil

Instructions:

  1. Begin by separating the cream filling from the Oreo cookies. Set aside the cookie parts and place the cream filling in a mixing bowl.
  2. To the mixing bowl, add the quark, 3 teaspoons of Choc Shot, sweetener, and vanilla extract. Stir until all ingredients are well combined.
  3. Crush the Oreo cookie parts by placing them in a ziplock bag and pounding them with a rolling pin until they are finely crushed.
  4. Grease a mini springform pan with spray oil and sprinkle the crushed Oreo cookies over the bottom of the pan. Press the cookies down firmly to create an even base.
  5. Spoon the quark mixture over the Oreo cookie base, smoothing the top with a spatula.
  6. Place the pan in the fridge for at least 2 hours to allow the cheesecake to set.
  7. When ready to serve, remove the cheesecake from the springform pan and transfer it to a plate. Drizzle the remaining teaspoon of Choc Shot over the top of the cheesecake.
