Slimming World Cheeseburger Quiche

Ingredients:
- 350g (12.5oz): of extra lean beef mince
- ½ teaspoon: of sea salt
- ¾ cup (180ml): of crushed tomatoes (or use passata)
- 2 tablespoons: of tomato paste (puree) – use 3 to 4 tablespoons if using passata
- 1 tablespoon: of granulated sweetener
- ½ teaspoon: of onion powder
- ½ teaspoon: of garlic powder
- 1 teaspoon: of paprika
- Salt and black pepper to taste
- 1 teaspoon: of Worcestershire sauce
- 1 large onion: thinly sliced
- 1 cup (225g): of fat-free cottage cheese
- 4 large eggs
- 120g (4oz): of cheddar cheese or Red Leicester (equivalent to 4 Healthy Extra A choices)
- Cooking oil spray
Instructions:
- Preheat your oven to 200°C or 400°F (gas mark 6).
- In a mixing bowl, combine extra lean beef mince with sea salt.
- Grease a quiche dish with cooking oil spray and spread the meat mixture evenly to form a thin layer at the base.
- Bake in the oven for approximately 10 minutes until lightly browned. The meat may shrink but that’s okay; You’ll add more layers.
- Absorb any excess juices with a paper towel and set aside.
- In a frying pan, use cooking oil spray and saute the sliced onions until they turn golden and soft.
- In a separate bowl, mix crushed tomatoes, garlic powder, onion powder, sweetener, salt, pepper, paprika, tomato paste, and Worcestershire sauce.
- Blend cottage cheese, eggs, and one-third of the cheddar cheese until smooth.
Now, it’s time to create the layers. - Spread the tomato mixture over the meat layer using a spatula.
- Add the sautéed onions on top, then pour the cottage cheese mixture.
- Sprinkle the remaining cheddar cheese on the surface.
- Return the dish to the oven and bake until the mixture sets, and the cheese melts and turns lightly golden on top (approximately 30 minutes).
- Let it rest for 10 minutes before slicing.
