Low Syn Lemon Drizzle Cake Recipe

Instructions:

  1. Begin by preheating your oven to 180°C (350°F) and lining the bottom of your cake tin with greaseproof paper. Lightly apply a coating of cake release.
  2. In a mixing bowl, sift the granulated sweetener and self-raising flour.
  3. Incorporate the juice from one of the lemons into the mixture.
  4. Employ a hand grater to zest both lemons, and then introduce the zest into the mix.
  5. Separate the egg yolks from the egg whites. Set the egg whites aside, beat the yolks, and combine them with the mixture.
  6. Whip the egg whites until they achieve a fluffy consistency and form soft peaks. Carefully fold them into the mixture.
  7. Transfer the mixture into the cake tray.
  8. Bake for 20-30 minutes at 180°C, or until the cake turns a lovely golden brown. Let it cool for a brief period.
  9. Mix the juice from the second lemon with 15g of sweetener and drizzle this over the top of the cake. Continue baking for an additional 10 minutes until the cake’s top develops a beautiful glazed finish.
