Instructions:
- Preheat oven to 200c or 400f (gas mark 6)
- Wash and dry the zucchini, then grate them with a coarse grater. Salt them and let them drain in a colander for about 10 minutes.
- In a spacious bowl, your mashed potato, grated courgette (zucchini), 1 egg and a sprinkling of garlic pepper.
- With a wooden spoon, combine together thoroughly and form into 6 equal sized patties.
- Spray a baking tray with low-calorie cooking spray. Carefully place the zucchini discs on the baking tray and spray the top with a little cooking spray.
- Bake in the oven for approx 15 mins, take out and carefully turn over with a spatula (they will fall apart slightly, but this is fine). Return them to the oven and bake for an additional 15 minutes until they acquire a slight golden hue on both sides.
- These make an excellent side dish for various meals or are delicious when enjoyed on their own.
