How to cook zucchini and potato fritters in the air fryer

Tips:

  1. Selecting Potatoes: Opt for starchy potatoes like russet or Yukon Gold for the best texture when mashing. Avoid waxy potatoes, as they can result in a gummy consistency.
  2. Mashing Potatoes: Mash the potatoes thoroughly and make sure they are free of lumps. You can use a potato masher, ricer, or even a fork to achieve a smooth texture.
  3. Zucchini Preparation: When grating zucchini, be cautious not to include the seeds if you’re using larger zucchinis. Zucchini seeds can release excess moisture, affecting the final texture of the dish.
  4. Draining Zucchini: Allowing the grated zucchini to drain in a colander with a bit of salt helps remove excess moisture. Squeezing out any remaining moisture with a clean kitchen towel or paper towels can further prevent sogginess.
  5. Flavoring: Feel free to customize the flavor by adding herbs or spices to the mixture. Fresh herbs like parsley, dill, or chives can add a delightful touch.
  6. Cooking Spray: Use a non-stick cooking spray generously to prevent sticking and ensure a crispy texture.
  7. Variations: Feel free to experiment with different seasonings and toppings, such as a dollop of Greek yogurt, a sprinkle of grated cheese, or a drizzle of hot sauce for some extra flavor.
  8. Make Ahead: You can prepare the mixture in advance and refrigerate it until you’re ready to bake. This is great for saving time on busy days.
  9. Reheating: If you have leftovers, you can reheat them in the oven or a toaster oven to restore their crispiness.
  10. Enjoy your potato and zucchini cakes.
