Courgette and Potato Pancakes
This recipe for Zucchini Fritters is so easy to make and requires only a few ingredients is great for breakfast or brunch. The fritters are loaded with grated zucchini in an egg mixture with mashed potato and garlic pepper.

Ingredients:
- 2 large potatoes: cooked and mashed (plain) potato (any potato will work, but I prefer russet)
- 2 courgettes (zucchini): grated zucchini If you are using small/medium zucchini, you can grate them as is. If you are using large zucchini, remove the seeds.)
- 1: egg
- garlic pepper: (if garlic pepper is unavailable, lightly dust with a combination of black pepper and garlic powder)
- Low-calorie cooking spray
- Onion (optional)
