Instructions:
- Shred Zucchinis and squeeze out excess water with a cheesecloth.
- add your mashed potato, grated courgette (zucchini), 1 egg and a sprinkling of garlic pepper.
- Mix together.
- Make 8 patties with the mixture.
- Optional ( place in the freezer for 5-10 minutes) to keep the form,
- Place air fryer on 350.
- Put zucchini patties in the air fryer for 5 minutes.
- Flip over the pattie for an additional 5-10 minutes or until brown.
Tips:
- Preheat the Air Fryer: Preheat your air fryer to the recommended temperature for the recipe. In this case, preheat it to 200°C (or 400°F) for about 5 minutes to ensure even cooking.
- Use the Right Accessories: Place the potatoes and zucchini cakes on the air fryer basket or tray in a single layer. It’s a good idea to use a perforated parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.

- Flip Halfway Through: Just like with the oven method, flip the potato and zucchini cakes carefully with a spatula or tongs halfway through the cooking time. This ensures even browning on both sides.
- Adjust Cooking Time: Air fryers cook food faster than conventional ovens. Keep a close eye on the cooking time. You may need to reduce the cooking time slightly from the oven recipe. Start with 12-14 minutes, and adjust as needed.
- Check for doneness: To check for doneness, use a fork or toothpick to pierce a cake. It should be tender on the inside, and the outside should be crispy and golden.
