Ingredients:

  • 2 zucchini, grated
  • 2 onions, halved and thinly sliced
  • 1 chili pepper, seeded and finely chopped
  • 100g fat-free cottage cheese
  • 6 large eggs
  • Salt and pepper to taste
  • 1 teaspoon dried mixed herbs
  • Low-calorie cooking spray
  • A small handful of fresh mint, chopped
  • 3 tablespoons of nutritional yeast (optional)

Instructions:

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Line a loaf tin (8×4.5 inches) with parchment paper and spray with low-calorie cooking spray.
  3. Grate the zucchini and place it in a strainer. Press down on the zucchini to remove as much liquid as possible. Set aside.
  4. Spray a large nonstick frying pan with low-calorie cooking spray and heat over medium heat. Add the onions, zucchini, and chili and cook for 10 minutes, stirring occasionally, until softened.
  5. Season with salt and pepper and transfer to the prepared loaf tin.
  6. Crumble the cottage cheese over the zucchini mixture.
  7. In a large bowl, whisk the eggs together. Season with salt and pepper. Add the dried mixed herbs, mint, and nutritional yeast (if using). Pour the egg mixture over the zucchini and cottage cheese.
  8. Bake for 30 minutes, or until the quiche is set and golden brown.
  9. Remove from the oven and let rest for 15 minutes before cutting into wedges.

Tips:

  • For a spicier quiche, add more chili pepper.
  • If you don’t have nutritional yeast, you can substitute it with grated Parmesan cheese.
  • This quiche can be served warm or cold.
