Chicken Hunters Recipe

Instructions:

  1. Preheat your oven to 200°C (fan 180°C or gas mark 6).
  2. In a large, shallow, flameproof casserole dish, combine the red wine vinegar, smoked paprika, garlic powder, Worcestershire sauce, and diced tomatoes. Place the dish over medium-high heat, bring it to a simmer, and let it cook for about 20 minutes, stirring occasionally. Season the sauce to your taste.
  3. While the sauce is simmering, gently flatten and elongate the bacon medallions. Drape a piece of bacon over each chicken breast.
  4. Nestle the bacon-wrapped chicken breasts into the sauce and spoon a bit of sauce over each one. Sprinkle the shredded mozzarella cheese evenly over the chicken breasts. Place the casserole dish in the oven and bake for approximately 20 minutes, or until the chicken is thoroughly cooked.
  5. As the chicken is near readiness, steam or boil the green beans for 3-4 minutes and then drain them.
  6. Sprinkle the chopped parsley over the cooked chicken, then divide the chicken and sauce among four plates. Serve with the green beans and the baked potatoes.

Tips:

  1. When adding mozzarella over the chicken breasts, ensure even distribution to cover each piece evenly for a gooey and cheesy result.
  2. To ensure the chicken is perfectly cooked, use a meat thermometer. The internal temperature of the chicken should reach 165°F (74°C). If you don’t have a thermometer, make a small cut in the thickest part of the chicken to ensure there’s no pink inside.
  3. Serving Options: While the recipe suggests serving with green beans and baked potatoes, feel free to experiment with side dishes. Steamed asparagus, a simple salad, or crusty bread can be great accompaniments.Prep in Advance: You can prepare the sauce and bacon-wrapped chicken in advance and refrigerate them.
