Crustless Asparagus Quiche

Instructions:

  1. Preheat oven to 200c, 180c FAN, 400f or gas mark 6)
  2. Spray a frying pan over medium-high heat with some Low-calorie cooking spray add the onion and cook until slightly golden. Remove and set aside.
  3. In a food processor, whizz up the sweet potato (raw) until very finely add onion and then whizz
  4. in 1 egg, and season with salt and pepper
  5. Spray a quiche dish with cooking spray and spoon the sweet potato mixture in. using a spatula, spread around the dish and up the sides until evenly covered. Using your fingers press in firmly, filling in any bare patches.
  6. Bake the sweet potato crust for 20 minutes
  7. Mix together the remaining eggs and mozzarella , and season with salt and pepper.
  8. Once the crust is baked, pour in the egg mixture and then lay the asparagus over the top.
  9. Sprinkle over the grated parmesan.
  10. Bake for 20-25 minutes until golden brown, and serve warm or cold.

Tips:

  1. When processing the sweet potato, make sure it’s finely grated. You want a smooth and even texture for your crust.

  4. Keep a close eye on your quiche in the final 20-25 minutes of baking. It’s done when it’s golden brown and the center is set. Overcooking can make the quiche dry.
  5. Allow the quiche to cool for a few minutes before slicing. It’s easier to cut and serve when it’s not piping hot. You can serve it warm or at room temperature, making it suitable for picnics and lunches.
  6. Store any leftovers in an airtight container in the refrigerator. The quiche can be reheated in the microwave or oven.
