Ingredients:

  • 1 small apple, peeled and finely chopped: (cooked without any added sugar)
  • 100g: of all-purpose flour
  • 5 tablespoons: of granulated sweetener
  • 1.5 teaspoons: of baking powder
  • 1/4 teaspoon: of salt
  • 20g: of sultanas
  • 3: eggs
  • 1.5 teaspoons: of mixed spice
  • 1 teaspoon: of vanilla extract
  • 6 tablespoons: of fat-free yogurt
  • Cooking oil spray
  • Optional: icing sugar for dusting

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Grease a cake tin with coconut oil spray.
  3. Begin by cooking the apple in a small amount of water for a few minutes until it’s slightly tender but not turned into a puree. Afterward, finely chop the cooked apple and set it aside in a bowl to cool.
  4. In a large mixing bowl, sift together the all-purpose flour, baking powder, mixed spice, and salt.
  5. Separate the egg yolks from the whites. To the egg yolks, add the vanilla extract, granulated sweetener, and yogurt. Whisk these ingredients together until you achieve a smooth paste.
  6. Incorporate this yolk mixture into the bowl with the dry ingredients and mix until a smooth batter forms.
  7. In a separate bowl, whisk the egg whites until they form soft peaks. Carefully fold the whipped egg whites into the cake mixture, ensuring all the ingredients are well combined. Be cautious not to overmix.
  8. Gently fold in the cooked apple and sultanas.
  9. Transfer the cake batter into the prepared cake tin and place it in the oven. Bake for approximately 45 minutes, or until a skewer inserted into the center comes out clean.
  10. Once the cake is done, remove it from the oven and let it cool completely while still in the cake tin.
  11. Carefully remove the cooled cake from the tin and cut it into 6 equal slices.
