Ingredients:

  • 25g: of dried porcini mushrooms
  • 125g: of dried Puy lentils
  • 375ml: of pipin hot vegetable (stock suitable for vegans)
  • A light coating: of low-calorie cooking spray
  • 1 large red onion: finely diced
  • 3 cloves of garlic: minced
  • 1 large carrot: cut into small cubes
  • 1 green pepper: finely chopped after removing the seeds
  • 400g can: of diced tomatoes
  • 1 tablespoon: of light soy sauce or tamari
  • 2 teaspoons: of vegan yeast extract
  • Freshly chopped parsley: for garnish
  • Cooked dried pasta shells for serving
