Cowboy Hotpot Recipe

Instructions:

  1. Start by preheating the oven to 200°C (fan 180°C, thermostat 6).
  2. Boil potato slices in a pot of boiling water over high heat for 5 minutes. Drain it and let it cool.
  3. While the potatoes are cooling, take a large nonstick skillet and spray it with low-calorie cooking spray. Place it on medium heat.
  4. Brown the sausages on all sides for 5 minutes. Next, add the chopped garlic, chopped onion and chopped pepper. Cook for another 5 minutes, stirring occasionally.
  5. Add tomato paste and smoked paprika to the mixture and cook for another 5 minutes.
  6. Dissolve a chicken stock cube in 200 ml of hot water. Add this mixture to the sausage pan, along with the bean mixture, cooked beans, sweet corn, Marmite, Worcestershire sauce, vinegar, and sliced scallions. Leave it to simmer for 5 minutes.
  7. Transfer the mixture to a baking dish and arrange the potato slices on top. Quickly spray them with low-calorie cooking spray.
  8. Place the dish in the oven and cook for 30 minutes.
  9. Serve this dish hot alongside your favorite vegetables.

Tips:

  • Potato Slicing:
  • When slicing the potatoes, aim for uniform thickness to ensure they cook evenly. A mandoline slicer can help achieve consistent results.
  • Low-Calorie Cooking Spray: Use a good-quality low-calorie cooking spray to ensure that the sausages and vegetables don’t stick to the pan. Make sure to spray evenly to reduce the need for excessive oil.
  • Sausage Choice:
  • If you prefer a different type of sausage, feel free to use it instead of Slimming World Pork Sausages. Just be mindful of the nutritional content, especially if you’re following a specific dietary plan.
  • Garlic and Onions: Keep an eye on the garlic and onions as they are sautéed. They should become fragrant and slightly translucent but avoid burning them as it can make the dish bitter.
  • Spices: Adjust the amount of smoked paprika according to your spice preference. You can add more for extra smoke or reduce it if you prefer milder flavors.
  • Stock Cube Dissolving: Make sure to dissolve the chicken stock cube completely in hot water to evenly distribute the flavor throughout the dish.
  • Marmite: Marmite adds a unique umami flavor. If you’re not a fan of Marmite, you can omit it or substitute with a vegetable bouillon or a similar umami-rich ingredient.
  • Baking: When transferring the mixture to the ovenproof dish and adding the sliced potatoes on top, arrange them in an even layer to ensure they cook uniformly and get crispy.
  • Cooking Time: Keep an eye on the dish while it’s in the oven to prevent overcooking. You want the potatoes to be golden and crispy, but not burnt.
  • Leftovers: This dish can make excellent leftovers for lunch or dinner the next day. Just reheat it in the oven or microwave for a tasty and convenient meal.
  • Enjoy!
