Instructions:
- Preheat your oven to 220°C/fan 200°C/gas 7
spray a non-stick baking tray with low-calorie cooking spray. - Cut the potatoes into chips like chips .
- Boil the chips in a saucepan of lightly salted boiling water for 5 minutes. Drain well, return to the pan and cover. Allow to cool slightly, then shake the pan to roughen the chips’ edges a little.
- Spread out the chips on the baking tray, nestle the sausages into the gaps in between the chips, and spray with a little more low-calorie cooking spray.
- Cook at the top of the oven for 25 minutes, or until the sausages are cooked through and the chips are golden, turning occasionally.
- Remove from the oven, make 4 gaps among the chips, spray the gaps with low-calorie cooking spray then break an egg into each one.
- Return to the oven and cook for a further 5 minutes or until everything is cooked to your liking.
- Season to taste, scatter over the parsley and serve with plenty of salad.
