A Free and spicy jackfruit chilli with sweet potato, roasted veg and a medley of beans
The hearty texture of jackfruit makes it perfect for this kid-friendly chilli, gently warmed with garlic and our own spice mix. Beans make it even more filling, while limey guacamole adds creamy contrast.

Ingredients:
- 2 crimson onions, one sliced into bite-sized chunks and the other finely minced
- 1 sizable russet potato, thoroughly washed and sliced into bite-sized chunks
- 1 generous sweet potato, peeled and cut into bite-sized chunks
- 1 vibrant red bell pepper, reseeded and sliced into bite-sized chunks
- Low-calorie cooking spray
- 2 substantial garlic cloves, crushed
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- ½ tablespoon smoked paprika
- ¼ teaspoon red pepper flakes
- 227g can of chopped tomatoes
- 2 cans (400g each) of drained jackfruit
- 1 can (400g) of mixed beans or pulses, drained
- 3 tablespoons tomato paste
- 1 crumbled vegetable stock cube
- 200g can of drained sweetcorn
- ½ small bundle of fresh coriander, roughly chopped (optional)
