The hearty texture of jackfruit makes it perfect for this kid-friendly chilli, gently warmed with garlic and our own spice mix. Beans make it even more filling, while limey guacamole adds creamy contrast.

Ingredients:

  • 2 crimson onions, one sliced into bite-sized chunks and the other finely minced
  • 1 sizable russet potato, thoroughly washed and sliced into bite-sized chunks
  • 1 generous sweet potato, peeled and cut into bite-sized chunks
  • 1 vibrant red bell pepper, reseeded and sliced into bite-sized chunks
  • Low-calorie cooking spray
  • 2 substantial garlic cloves, crushed
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • ½ tablespoon smoked paprika
  • ¼ teaspoon red pepper flakes
  • 227g can of chopped tomatoes
  • 2 cans (400g each) of drained jackfruit
  • 1 can (400g) of mixed beans or pulses, drained
  • 3 tablespoons tomato paste
  • 1 crumbled vegetable stock cube
  • 200g can of drained sweetcorn
  • ½ small bundle of fresh coriander, roughly chopped (optional)
