Roasted Veg Curry Recipe

List of Ingredients:

  • 400g of carrots, cut into chunks
  • 400g of parsnips, cut into chunks
  • 2 medium-sized sweet potatoes, halved lengthways and cut into chunks
  • Low-calorie cooking spray
  • 1 tbsp of cumin seeds
  • 1 tsp of garam masala
  • 2 medium-sized peppers (red and yellow), deseeded and cut into chunks
  • 350g pot of Slimming World Rogan Josh Sauce
  • 200g of cherry tomatoes
  • 400g can of green lentils, drained and rinsed
  • 200ml of hot vegetable stock
  • 4 tbsp of fat-free natural yogurt
  • Small pack of fresh coriander, with a few sprigs reserved and the rest roughly chopped
