Mixed Vegetables With Lentils

A hearty, satisfying combination of vegetables and lentils. Simply top with a poached egg and enjoy!

Ingredients:

  • 110g/4oz dried puy or green lentils
  • 1 red onion, peeled, halved and thinly sliced
  • 2 garlic cloves, peeled and finely diced
  • 300g/ 11 oz cherry tomatoes,
    halved
  • 2 sticks celery, trimmed and cut into small dice
  • 2 carrots, peeled and cut into small dice a large bunch of flat-leaf parsley, finely chopped
  • 2 tbep finely chopped mint leaves salt and freahly ground black pepper
  • To serve
  • 4 poached eggs (optional)

Instructions:

  • 1 place the lentils in a large saucepan of lightly salted water and bring to the boil.
  • Reduce the heat and cook gently for 15-20 minutes or until the lentils are just tender. Drain and keep warm
  • While the lentils are cooking, spray a large , non-stick frying pan with fry light and place over a medium heat. add the red onion and garlic and cook stirring, for 2-3 minutes or until softened.
  • Add the cherry tomatoes, celery and carrots and stir-fry for 6-8 minutes or until the mixture is warmed through and the vegetables are just softened .
  • Add the lentils, parsley and minutes the vegetable mixture, season, toss to mix well and ladle into four warmed plates.
  • Serve immediately, topped with a poached egg if desired.
