Mini Chicken/Turkey Meatloaves with Tomato and Herb Sauce

Ingredients:

  • 500g (17.5oz) extra lean minced chicken or turkey
  • 1 small grated carrot
  • 1 finely chopped onion
  • ½ chopped red pepper
  • 1 deseeded and chopped red chilli
  • 1 egg
  • 240ml (1 cup) passata or crushed tomatoes
  • 1 tbsp tomato paste
  • Fresh rosemary
  • 2 crushed garlic cloves
  • Splash of Worcestershire sauce
  • 1 tbsp brown sugar (2.5 syns)
  • Spray oil

Instructions:

  1. Preheat the oven to 200°C/400°F (gas mark 6).
  2. Spray a frying pan with some spray oil and place over medium heat. Add the chopped onion, red pepper and chilli and cook until they are softened. Remove from the heat and let it cool.
  3. In a bowl, combine the passata with some finely chopped fresh rosemary leaves (from 2 stems), crushed garlic, 1 tablespoon of brown sugar, tomato paste and a splash of Worcestershire sauce. Mix everything thoroughly.
  4. In a large bowl, mix the minced chicken or turkey, grated carrot, previously cooked onion, red pepper and chilli, 1 egg and ¼ cup of the sauce mixture together.
  5. Grease a mini meatloaf pan with some spray oil and fill each meatloaf space with your mixture (should make approximately 5 mini meatloaves). Alternatively, you can make one large meatloaf.
  6. Brush the top of each meatloaf with the sauce and place them in the oven. Bake for approximately 30 minutes.
  7. Let the meatloaves rest for 5-10 minutes before serving.
  8. Serve with your choice of sides.
