  • 1 kg/2lb 4oz baby new potatoes
  • 2 lemon, thinly sliced
  • 1 garlic bulb, cloves separated but not peeled
  • 2 bay leaves
  • 1 sprig of rosemary
  • salt and freshly ground
  • black pepper

  1. Preheat the oven to 220°C/ Gas 7
  2. Scrub and wash the potatoes and place in a non stick roasting tin in a single layer
  3. Scatter over the lemon slices and garlic .
  4. Crumble over the bay leaves and rosemary and season well.
  5. Spray with fry light and place in the oven and roast for 20-25 minutes or until the potatoes are browned and tender
  6. Serve immediately.
