Instructions:
- Preheat oven to 200c/400f (gas mark 6).
- Spray a frying pan over a medium-high heat with spray oil. Add the chopped bacon and fry until golden. Remove from pan and set aside.
- Spray the frying pan with a little more spray oil. Add the sliced Brussels sprouts and saute for 2-3 minutes, or until slightly softened.
- Add the garlic, stock, and salt and pepper. Saute for 5-7 minutes, or until the stock has reduced and the Brussels sprouts are tender.
- Transfer the Brussels sprouts to an ovenproof dish. Sprinkle with the grated Parmesan cheese and chopped bacon.
- Bake for 20 minutes, or until the cheese is melted and golden.
Tips:
- For a richer flavor, use whole milk instead of chicken or vegetable stock.
- If you don’t have Parmesan cheese, you can use Gruyère or another type of hard cheese.
- You can also add other vegetables to this gratin, such as broccoli, carrots, or mushrooms.
