Ingredients:

  • 1.25 lbs. (567 g) rack of lamb, about 7-8 chops
  • 3 tablespoons (45 ml) olive oil
  • 2 tablespoons (30 ml) chopped fresh rosemary
  • 1 teaspoon (5 ml) garlic powder or 3 cloves garlic, minced
  • 1 teaspoon (5 ml) salt, or to taste
  • 1/2 teaspoon (2.5 ml) black pepper, or to taste

Instructions:

  1. Pat dry the lamb rack and cut into individual chops. Remove silver skin from the underside of the ribs if needed.
  2. In a large bowl, combine olive oil, rosemary, garlic, salt, and black pepper. Add the lamb chops and gently toss to coat in the marinade. Cover and marinate for about 1 hour or up to overnight.
  3. Preheat the air fryer to 380°F/195°C for 4 minutes. Spray the air fryer basket/tray with oil spray and place the lamb chops in a single layer, making sure not to overlap the meat.
  4. Air fry at 380°F/195°C for 8 minutes, flip the lamb chops, and air fry for another 3-6 minutes, or until they reach your preferred doneness.
  5. Serve warm and enjoy!
