Ingredients:
- Low-calorie cooking spray
- 1 diced onion
- 1 medium butternut squash, peeled, deseeded and cut into wedges
- 1 small potato, quartered
- 2 crushed garlic cloves
- 900ml hot vegetable stock suitable for vegans
- Thyme sprigs for serving
Method:
- Heat a large non-stick pan over low heat and spray it with low-calorie cooking spray.
- Add the diced onion and cook for 1-2 minutes.
- Turn up the heat to medium and add the butternut squash and potato. Cook for 2 minutes.
- Add the crushed garlic and lightly season.
- Pour in the hot vegetable stock and simmer for 25 minutes.
- Use a stick blender or food processor to blend the mixture until smooth.
